In Spain where I lived for nearly 20 years these kind of water bottle /containers were very common. Anyone working outside in the sun felt the need for a cool drink of 'agua fresca' ...and that's where these come in ! The botijo is not high fired so allows some water to permeate through the wall to the outside where it rapidly evaporates, the process of evaporation causes a drop in temperature and this cools the water inside !
Have a go at making one of these !
