Chicken feet are rich in collagen and the amino acid glycine, which is important for balancing the intake of muscle meats which are low in glycine. They can also be used to make a gelatin base or stock. They are perfectly clean once the skin is peeled off, and they're fun to eat.

The feet are dipped in boiling hot water briefly then peeled before cooking for a a couple hours.
