How To Make Wild Game Brats

How to make wild game brats. This is an easy recipe and way to make your own sausage from your harvest. In this video they are made from elk, but you could easily substitute that with venison, antelope, turkey, etc.

The possibilities are endless when making wild game sausage but Bratwurst are a great place to start. You will need a meat grinder (unless your meat is already ground), and a sausage stuffer. Some grinders have stuffing options built in, but generally most people recommend getting a dedicated stuffer.

Recipe:
5 lbs wild game meat
1.25 pork fat/meat
1.5 tbsp kosher salt
1 tbsp ground white pepper
1/2 tbsp ground ginger
1/2 tbsp grated nutmeg (Note: Traditionally, brats are made with mace and not nutmeg)
1 tsp ground cloves
Ice or ice water ground or mixed in
