This is a fix that seems to be working for most people. I hope it helps.

Original solution posted to reddit by u/Agnor_tor and brought to my attention by ivan alvarez here on Youtube. Thanks to you both.

List of Steps to Fix the Problem

Leave your Pro Controller connected via Bluetooth, not by USB, and undock your Switch for this process

1. Restart the Switch by holding down the power button and select Restart
2. Go to Calibrate Control Sticks and begin calibration of the stick
3. Before moving the stick in the four directions ask, force the stick back to centre position carefully
4. Complete the calibration
5. Press B until you reach the "Press down the stick that you want to calibrate" screen
6. Hold the sync button on the Pro Controller to disconnect the controller
7. Hit the Home button on your Switch
8. Go to Controllers and the Change Grip/Order
9. The Pro Controller should pair with the Switch again
10. Go back to Calibrate Control Sticks and confirm that it is fixed.

Again I don't get it, but hopefully you have success with this solution.

Happy gaming!
