Make your fist cut on the bottom side of the tenderloin where there is a seam, you first cut is at 45 degree angle then take for knife and hold it flat to the cutting surface , take you time and make your cuts to where you are not going all the way through peel then tenderloin back and make another cut and repeat until you have your tenderloin all the way open.
