I’m not much of a freezer meals person. Although some foods do really well when frozen, I find most things improve after a day or 3 in the fridge, and I tend to apply a “nextovers” protocol, where I make them and eat them within the same week. The only exception to this is a stewy meaty kinda thing like bolognese sauce or chili.
That being said, I am a big fan of freezing individual ingredients or components when it makes sense. Things like - an abundance of fruit in the summer, a can of tomato paste that would otherwise go moldy in the fridge, raw meat - if I did a random trip to Costco or something, or homemade chicken stock.
Techniques
-IQF (Individually Quick Frozen)
-Portion sizes - too big and it’ll take a week to defrost. You’ll know this if you’ve ever defrosted a whole turkey.
-Prep beforehand - especially with things like bread or buns. Cut them first!
-Squeeze out the air if you’re using a bag. Again, minimizing air is best!
-Leave room for expansion if you’re using a container
-Freeze fast, thaw slow
Freezer Containers
When choosing your freezing container you should consider a few things.
Stack-ability - for space optimization
Air minimization - to prevent freezer burn
Defrost-ability - you want your food to defrost quickly and evenly
Freezing Do’s and Don’ts
NO:
-Cooked meat (unless it’s really saucy like chili or turkey stew)
-Vegetables (unless you’ve blanched them first - demonstrate on spinach)
YES:
-Homemade Baked goods - they double as an ice pack when you’re packing your kids lunch
-Juice boxes work the same way
-Cookie dough - Reap the rewards of freshly baked cookies on demand!
Bolognese sauce! - when something takes this long to cook, its nice to make extra and have a quick dinner ready with the cooking of some pasta!
Thanks for watching!
A little about me:
I'm Paula, and I started How To Make Dinner because dinnertime is my favourite time of day. (Except on weekends, when it's breakfast, but you get the point.) I love winding down at the end of the day with a good cooking and eating sesh.
I love dinnertime SO MUCH, but I know not all of you feel the same way. Feeding ourselves and our families can be stressful. So I started this channel and my blog to help give you easy dinner ideas for enjoyable home cooking with less fuss.
My dinnertime strategy - Keep it simple and delicious, and don't use too many pots and pans. Learn to cook with me and you'll be the master of quick and easy dinners that will please everyone.
