It's almost impossible to make hard cheese if you don't have a proper cheese press to press the curds. Most cheese presses are very expensive to buy. However, you can make your own for a little over $10. I have made hard cheese at home for 15 years and have experimented with lots of cheese presses. The one I show you in this video is easy and quick to make, and it's the one I recommend to my cheese making students.
