My lemon muffins recipe is a sweet, fruity and easy to make using freshly squeezed lemon juice and grated lemon peel. Here are the ingredients i used:
2 cups all purpose flour
3 teaspoons baking powder
1/2 teaspoon salt
3/4 cup sugar
2 Tablespoons freshly squeezed lemon juice
lemon zest from 1 lemon
2 eggs
1/2 cup canola oil
3/4 cup milk
1 teaspoon vanilla extract
