Hello and welcome back to In the Kitchen with Matt, I am your host Matt Taylor. Today I am going to show you how to make sugar cookies. Mmm, sugar cookies are really yummy, perfect for the holidays, I had a request to make a show on sugar cookies, so here we go, let’s make some sugar cookies. Really easy to do, if I can do it, you can do it, Let’s get started. First let’s preheat our oven to 350 degrees. Next what we are going to do is take our butter, this is softened butter, 1 cup, and then we are going to take our one cup of sugar, put that in there, and then let’s go ahead and cream these together, with a mixer. Scrape the sides, now let’s add our extract, one and a half tsp of vanilla extract, add our one large egg, let’s mix that. Scrape the sides, grab our flour, 3 cups of flour, we are going to add 2 tsp. of baking powder. We will whisk this together real well. Okay great. Let’s go back to our mixture here. Now we are going to add the flour a little bit at a time. Scrape the sides, add some more flour, it is going to start to get a lot thicker, add some more flour, more flour, and we want to add some more flour, and it is going to start to get really thick, but we want to just keep adding that flour until we get it all in there. Okay, we will just add the rest of it, we are good to go, and we are going to take off our beaters, set that mixer aside. I am going to go ahead and push this down. Now what we are going to do, just scrape this down a little bit. Come in with our hands, and just get it all together. Just push it all together. Okay we are just squishing it all together, compacting it all together a little bit, okay and it will get nice and smooth, okay once it comes all together like this, now at this point you can refrigerate the dough, it is not necessary, if you are not going to use it all right away, go ahead and refrigerate your left overs. Get a little bit of flour, I just have a little bit of flour over here in a bowl, I am going to get my surface all nice and dusted over here. And I am going to take about half of this at a time to roll out. Just kind of push it down, where there are little cracks, makes sure there is flour on your rolling pin, and you can roll it out as thick as you want, um, fairly thick works nice, about a fourth of an inch. All right let’s get our cookies cutters; I am using a Christmas cooking one, go ahead and push it down, and wiggle it a little bit, and pull it up. All right once you have them all cut there, you just kind of peel away the sides, get all the dough out from the cut-outs, and then you just clump all the remaining dough together and roll it out again. And then you can use a spatula here to pick up a cookie, and put it on your cookie sheet, now I am using an artisan mat, I really love artisan mats, you can use parchment paper if you like, I really like the artisan mat, they are reusable they last a really long time, if you want to pick some up, I will put a link down below where you can get them, really awesome, highly recommend artisan mat. And now our cookies are ready to go in the oven, we are going to bake these at 350 degrees for 6 to 8 minutes, if you leave them in a little bit longer they will get more crispy.
