How to cook eggplant omelette

Eggplant omelette is the basic tortang talong. The only difference is the way it was prepared and presented. I had all the ingredients including the eggplant mixed in a bowl. The mixture is then poured into a circle eggplant and fry both sides.

Ingredients:
2 pieces egg
I medium to large eggplant
1 - 2 tbsp ginisa powder mix
1 - 2 tbsp salt
1 tbsp coarse or ground black pepper
Olive oil for frying
1 medium carrots
Spring onion
1 piece onion
