On Christmas Eve Eve I was kindly gifted a fantastic range of game birds for me to process and feed my family. I started with the goose which I cooked for Christmas day, ive never processed a Goose before, but using what I have learnt from processing pheasant & pigeon transferable skills to complete the task.

this is just how I do it, I am not an expert and certainly no butcher, I understand there are loads of different ways to do this, but this is my chosen method currently.
