How to prepare Gwate
ChannelApexTVDescription from the creator
On Apex Delight this week, our Chef, Chima, traverses Northern Nigeria to bring you this delicacy, Gwate, or Pate in some dialect.
Up north, Gwate is not just a meal. It is a lifestyle; a culture of sorts. No traditional occasion goes down without this delicacy.
Ingredients
Hungry Rice (Acha)
Green peas
Green Pepper
Carrots
Sweet Corn
Fresh Tomatoes (sliced)
Salt
Stock cubes
Curry
Dried Fish
Cray Fish
Pepper (blended)
Groundnut Oil
Preparation
Wash Acha thoroughly to remove sand. Nicely chop green peas, green pepper, carrots, spring onion, and red onion. Heat up groundnut oil in a pot. Add sliced tomatoes, and chopped onion. Stir slightly and then add other chopped ingredients. Add curry and a little fresh pepper and then stir. Put in a little water, and bring to boil.
Next, add your dried fish, your grounded crayfish and what is left of your pepper. Next, you put in your sweet corn, after which, you add your stock cubes and salt to taste.
Stir for a few seconds and then put in your Acha. Continue stirring until it thickens.
Your Gwate is ready.
