How to Easily Fillet a Halibut Step-by-step

On this awesome how-to video, Andrew Pereira teaches us how to fillet a nice size Southern California Halibut he caught fishing out of long beach California. This technique on filleting fish also applies to other flatfish, including Fluke, Sole, Flounder, turbot, place, etc. He also teaches us how to store fish properly and airtight without using a vacuum sealer.

Important notes,

Make sure your fillet knife is very sharp and flexible. The larger the fish, the larger the blade long strokes and cleaner cuts.

The top fillets are always thicker. If it is your first time you may want to start with the bottom will side since there is less meat to mess up on.

Wearing gloves and using rags makes it a lot easier to grip a slippery fish.

Once you have one fillet off, the second comes off much easier.

Take your time until you are comfortable. It will get easier with practice.

Make sure fillets are dry and do not clean fish with fresh water before storing.
