Hey guys!! It’s been so long. There’s so much to update you on, I don’t know where to start. Well, I’ve been trying new healthier recipes in my kitchen this month since I made a diet switch over to Vegan. Not for good. Just for April and possibly May. My daughter is a vegan so I said I’d give it a try as well. So far my body is loving it! I have a lot more energy and I’ve noticed a few other changes like less brain fog. One of the things I’m learning in this journey is to listen to my body more. Which is why I made this delicious Kale salad today. My body was craving leafy greens and this salad hit the spot.
