A good ferment is at the basis of everything from wine to beer to whiskey, and even cheese and stuff like kimche. The trick is to understand the principles of grain, sugar, yeast and sour mash backset. The last component is rarely discussed on videos of this nature but I believe it is the key to great ferments.
