Does your school require you to submit grades by marking periods? On google classroom, you don't need to delete old assignments nor create a new classroom. You just need to rename the grade categories and re-enter percentages.
If you still need the grades of MP1 to show parents on parent-teacher conferences, you can just make the MP2 categories 0% for now, and switch the percentages after the PTC.
