Blind baking is simply the process of cooking a pastry case blind (empty) for making fruit flans for example. This requires filling the empty pastry case while baking to keep the pastry in shape while baking. You can use uncooked rice or special baking beans; try and use something that you can use again and again.

Line a flan case with some shortcrust or sweet shortcrust pastry (see youtube.com/watch?v=z2SMnZ51SLo).
