Recipe:
Pie Crust:
2 ½ cups flour
2 teaspoons sugar
1 teaspoon salt
1 cup cold butter
½ cup ice water

Filling:
2 pounds apples (around 7 cups)
½ teaspoon cinnamon
3 tablespoons flour
1 teaspoon vanilla
½ cup white sugar
¼ cup brown sugar

1. To make the crust cut the cold butter into the flour, sugar, and salt. Mix until it resembles coarse meal, small and larger pieces are okay.
2. Add in the water a little at a time making sure not to add too much. Stop adding water when the dough starts to form large clumps. You may need less or more than ½ a cup.
3. Take the dough out onto a working surface and fold until it just comes together as one. Do not over knead.
4. Divide in half and wrap each piece and place in the fridge for 2 hours before using.
5. To make the filling peel and thinly slice the apples. Add apples to a large bowl along with the sugar, flour, cinnamon, and vanilla. Let it sit until you roll the crust.
6. Take out the pie crust from the fridge and start rolling, use extra flour so it doesn’t stick. Line a 9 inch pie plate with the crust.
7. Fill with the apple mixture. Roll the second crust and place on top, or cut into 12 strips for a lattice crust.
8. Fold the lattice pieces under the bottom crust and crimp all around the edge.
9. Brush the whole pie top with an egg white with a splash of water.
10. Place the pie into the freezer for 30 minutes before baking.
11. Bake at 400°F for 15 minutes then turn the heat down to 350°F and bake for another 35 to 40 minutes. You’ll know the pie is done when the crust has browned and the filling is bubbling.
12. Wait for the pie to cool down before cutting into it.
