How to make homemade marshmallows using a box of Jell-o powder. So much easier than the stove top cook method and no candy thermometer required!

3 oz (one box) any flavour Jell-0 gelatin powder
2/3 cup boiling water
1 cup granulated sugar
3 tbsp light corn syrup
Powdered sugar for dusting marshmallow pieces

Mix jell-o powder and boiling water together until powder is dissolved. Stir in granulated sugar until dissolved. Stir in corn syrup until blended.
Refrigerate until slightly thickened.
Beat for 5 minutes or until stiff peaks form. Pour into an 8x8" baking dish that has been greased or lined with greased foil or parchment.
Chill until set (several hours or overnight).
Remove from pan and cut into cubes, rolling cubes in powdered sugar until coated. Serve immediately. Store covered in the refrigerator.

This recipe comes from a book called "150 Delicious Squares by Jean Paré " This is one of my most favourite cookbooks. It was originally published in 1981.
