Lemons are in abundance right now and I'm lucky to have a neighbor with a Meyer Lemon tree. There would be no way to go through all these lemons before they go bad, so it is the perfect time to make some Preserved Lemons. Preserved Lemons have so many different applications, from appetizers, main courses and even drinks. So don't let those lemons go to waste, preserve them and spice up your dishes all year round!

FULL RECIPE

Ingredients

4-5 Meyer Lemons (per jar)
Course Sea Salt
Whole Allspice
Whole Cumin Seed
Whole Coriander Seed
Whole Mixed Peppercorns
Whole Cinnamon Sticks
Bay Leaves

STEPS

In a warm pan add a Tablespoon or 2 or the Allspice, Cumin Seed, Coriander Seed and Peppercorns. This will help release the oils from the seeds and bring out the flavors. A minute or two in a medium heat pan will do the trick

Wash your Meyer Lemons and slice into quarters but not all the way through to the other side. You want the four pieces of lemon to still be attached at one end.

Add the roasted spices to a small bowl of Course Sea Salt and mix around.

Fill the lemon with the salt mixture and put in mason jar. Repeat with 3-5 lemons depending on the size of your jar. Press the lemons into the jar to help release all the juice. You don't want to have any air pockets to insure no bacterial growth.

Once the mason jar is filled and the lemons have been pressed into the jar not allowing room for anymore, shove a couple cinnamon sticks and bay leaves into the jar.

Top with more of the salt mixture and pat down with a spoon. Clean the outside and rim of the jar and screw the lid on securely. Leave at room temperature for 3 weeks to a month to preserve the lemons.
