Your Google Merchant Center product data and website must always be synchronized so you can keep your ads alive without any interruption. When you enable automatic item updates in Google Merchant Center, you allow Google to update your product details on Google Shopping, including price and availability. Using a schema markup, Google updates your ads when they notice a difference between your site’s microdata and Merchant Center product data. Google takes the information on the data markup on your store to continue with these updates.

Automatic item updates is specifically useful when you are using Google sheets for your product feed and you can't update it all the time. Take note that delay between data updates on your site and updates to your Google Merchant Center could result in incorrect product data and account disapproval. But you can avoid this delay and disapproved product data by enabling Merchant Center automatic item updates.

Since Google is updating your product data using your website's microdata, the number of mismatches between your website and Shopping ads are minimized. In return, the risk of your account getting suspended for product data mismatches is reduced. Therefore, you can continue showing your ads to shoppers, improve their user experience, drive more traffic to your ads, and increase conversion rates.
