There are few steps that you need to do inside iTunes software in order to be able to transfer video to iPhone, iPod or iPad.

#1 Turn on Menu (by clicking on small tiny icon at iTunes top corner left side. From that menu choose option to make Main Menu visible.

#2 One's you have menu visible go "View - Show Side bar"

#3 Click on iPhone, iPod or iPad device at iTunes (left side bar" and choose "Summery" At the bottom of the screen under "Options" choose Manually manage music and videos.
