THE RECIPE
10 X 15 inch pan - Prepare your pan ahead by rubbing butter or shortening onto the pan, then cut wax paper to fit, grease the wax paper and sift cocoa over it.
4 large eggs separated, at room temp
5 tablespoons of sifted cake flour
1/3 cups sifted unsweetened cocoa
1/2 teaspoon cinnamon
1/4 teaspoon salt
1/2 teaspoon baking powder
1/4 teaspoon baking soda
3/4 cup granulated sugar
1 teaspoon vanilla
Sift the dry ingredients together
Add the egg whites to a clean bowl and attach the whip. Beat until frothy then add 1/2 cup of the sugar
Whip at high speed until the whites are shiny and hold a peak
You should be able to hold your bowl upside down while the meringue stays in place
Next remove the whites and put them into another bowl, add the egg yolks to the bowl, (no need to clean it or the beaters.) Add the vanilla and remaining 1/4 cup sugar, whip until pale in color.
Scrape the bowl a few times during this process. (takes about 3 minutes with a Kitchen Aid, longer with a regular hand held mixer)
Put the yolks into a clean bowl, fold in about 1/3 of the meringue (egg whites) Then add about 1/4 of the dry ingredients and fold. Continue folding adding small amounts of each mixture until it is all blended.
Fold with a light touch so as not to decrease the volume of the batter.
Spread the batter carefully into the pan and make it as even as possible. Do not over do. You want to keep the volume.
While the cake is baking sift cocoa onto a small tea towel.
Bake in a 350 oven for 15 minutes. Don't over bake this cake or it will be dry. The top should spring back or a toothpick should come out clean when finished.
Cool slightly and then flip the cake onto the towel. Carefully remove it from the pan. You may have to hit the pan as I do here to help release it. Peel the wax paper off, and then roll it up to cool.
