Here's a very simple and quick video showing how to prep, or clean, shitake mushrooms. One of my favorite varieties, I use shitakes in all kinds of dishes, as they have a pretty unique flavor and texture. But unlike most mushrooms, you should use the stems and you need to clean them off.
