Recipe - How to Make Fresh Mozzarella

Ingredients:

2 1/2 - 3 lbs cheese curd
Pot of hot water 165-170 degrees
Large bowl of cold water
Salt to taste

Slice Curd and place in bowl. I usually use about 3 lbs. which yields three one pound balls but you can use whatever amount you want.

Boil water until it reaches a temperature of 165-170 (temperature of the water is very important). You can either add salt to boiling water or you can sprinkle it over the sliced curd, your choice.

When water has reached desired temperature, pour over sliced curd. Make sure the curd is covered completely.

With your hands (I use plastic gloves as the water is very hot) and a large spoon start to stretch the curd until all the little lumps in the curd are worked out. Do not over stretch or the mozzarella will be tough. It should take about 3-5 minutes depending on how much curd you used. The mozzarella will look silky when done.

Then form the balls with your hands and drop into the cold water. After the mozzarella is cooled in the water (about 30 minutes) you can slice and eat. If you do not let the mozzarella cool it will flatten out like a pancake.

Use the mozzarella for whatever you want. I like to slice the mozzarella and place in serving dish alternately with slices of fresh tomatoes. Sprinkle with fresh basil and olive oil and serve ala Capresse salad.
