Dreaming of homemade jerky that's incredibly soft and tender, just like your favorite store-bought brands? This video reveals the secret! While traditional jerky focuses on drying meat to prevent bacterial growth, we'll show you how to make tender jerky at home that maintains a low water activity for safety while remaining deliciously pliable. The key? Incorporating additional sugar, which expertly locks in moisture and inhibits microbial growth.

We're demonstrating this tender jerky recipe using 25 lb of eye of the round cuts, trimmed of fat, combined with Walton's Bold Jerky Seasoning and cure. We'll add 18% of the starting meat weight in light brown sugar and 20% in water to achieve that signature tenderness. That's about 2.8 oz of brown sugar and 3.2 oz of water per pound of jerky! You'll see how crucial it is to dissolve the sugar completely in the water first, then mix in the cure and seasonings incredibly well—we recommend mixing even longer than you think you need to!

To ensure your jerky stays tender, avoid cutting the pieces too thin; aim for 1/4 to 3/8 inch thickness. We'll show you how to use a slicer for uniform cuts, optionally shaping them into classic jerky strips. A pro tip: flash freezing your eye of the rounds for about 45 minutes makes slicing easier and more precise.

Once sliced, we'll tumble the meat for 40 minutes in our KMV Vacuum Tumbler (a marinade express vacuum tumbler-pro works well too!). This tumbling action ensures the meat absorbs as much of the solution as possible. If you don't have a tumbler, we'll explain how to achieve similar results by holding your mixture in a cooler for 12-24 hours, emphasizing the importance of thorough initial mixing. Finally, we'll demonstrate how to properly lay out your jerky on screens, leaving space for airflow to create a "chimney" effect, and how to place a probe thermometer to monitor the drying process. Get ready to transform your jerky game and enjoy perfectly tender, flavorful results!
