How to make lemon curd tart recipe | lemon curd recipe

Sweet and fluffy pastry top with silky smooth lemon curd.

Recipe for lemon curd tart
Ingredients:

For crumble pastry:

Plain flour - 1 cup
Baking powder - 1 tsp(5g)
Sugar - 100g
Butter - 60g
Egg - 1

For lemon curd:
Lemon zest - 1 tbsp(15g)
2 eggs, plus 2 egg yolks
sugar - 150g
Butter - 80g
Juice of 2 lemons

Method:

Combine all Flour,baking powder and sugar.
Then add the butter and beat until butter incorporated.
Add the egg and beat until crumble.

Take a six small or a one 24" tart tin.
line the crumble in the tin and bake for 20 min on 180°c.

Meanwhile in a sauce pan add lemon zest,eggs,egg yolks and sugar. whisk until well combine then put on the medium heat and keep whisking until mixture gets thickened.
Once the lemon curd get thickened add the butter and cook for 2 min.

Let the lemon curd cool down.

Fill the lemon curd into the crumble pastry.

Serve with your choice of hot drink.
