Description from the creator

Roasted artichokes with a simple garlic dip. If you have never cooked fresh artichokes before, this is an easy way to start. Full recipe: happyfoodstube.com/oven-roasted-artichokes-with…

INGREDIENTS

Artichokes, ½ to 1 per person
Extra virgin olive oil
Salt
Black pepper
Lemons

FOR THE GARLIC DIP

2 teaspoons sour cream, or more
1 tablespoon ketchup
2 garlic cloves, crushed
Salt, to taste
A squeeze of lemon juice

METHOD

1. Preheat the oven to 400°F (200°C).
2. Wash the artichokes. Trim the stems, cut off the tops and slice them in half lengthwise. 3. Squeeze lemon juice over the cut sides.
4. Place them on a lined baking sheet. Drizzle both sides with olive oil, season with salt and pepper and add another squeeze of lemon juice.
5. Turn the artichokes cut side down and roast for about 30 minutes. They are ready when a leaf pulls away easily. Larger artichokes may need a little longer.
5. While the artichokes roast, mix the sour cream, ketchup, crushed garlic, salt and lemon juice for the dip.

HOW TO EAT THEM

Pull off one leaf at a time and scrape the soft part at the base with your teeth. When you reach the center, remove the fuzzy choke and eat the heart underneath.

Prep time: 15 minutes
Cook time: about 30 minutes
