Description from the creator

Christmas cookies are a must during the holidays and just because you or someone you love eats gluten free doesn't mean you have to miss out on all the fun. I love making Christmas cookies with my kids and my kids especially love these. They are not only so fun to look at but taste great too. Everyone will be so impressed when you set these out!

I show you how to make these amazing gluten free Christmas pinwheel cookies in this video. For this recipe I used Bob's Red Mill Gluten Free 1 to 1 baking flour. This gluten free flour is really my go to for all my gluten free cooking and baking. It just handles really nicely and it makes it possible to get a great roll out of these cookies. I had previously thought something like this would be impossible because gluten free cookie dough is so brittle and can fall apart so easily but I found a way! Using plastic wrap is a must! You need to use it to give the cookies support so that they can roll. You also need to chill it before you cut it but after you roll it. The dough is a lot easier to manipulate before you chill it so don't try to roll it after you chill. Trust me!! This is a super fun Christmas cookie but it isn't the easiest so be warned but if I can do it, you can too!
