In brief

You’ll master the art of crafting a showstopping Beef Wellington with a crispy lattice crust and tender beef center. This method breaks down the process into manageable steps, from preparing the duxelles (mushroom paste) to wrapping the beef in prosciutto and crepe, making it perfect for home cooks eager to impress. No prior experience is needed—just patience and attention to detail.

Key steps

  1. Sear the beef tenderloin in oil until browned, then season with salt, pepper, and Dijon mustard.
  2. Cook shallots, garlic, mushrooms, and optional whiskey/thyme in olive oil until dry.
  3. Mix flour, milk, egg, and salt into a smooth crepe batter, then cook thin crepes.
  4. Assemble the Wellington by layering prosciutto, duxelles, and crepe around the beef.

Questions & answers

What type of mushrooms work best?

Cremini or a mix of mushrooms are recommended for the duxelles.

Is whiskey necessary in the duxelles?

No, whiskey is optional and can be omitted.

Description from the creator

How can you make beef Wellington like Gordon Ramsay, or perhaps better?? It's actually surprisingly simple and easy and it doesn't require prior experience. It just takes some effort and a little bit of patience, and you'll have a beautifully latticed crispy on the outside melt in your mouth on the inside Beef Wellington.
